Ingredients

  • 1 cup fresh strawberries
  • 1/2 cup cucumber
  • 1/2 cup grapes
  • 1 cup watermelon
  • 10 mint leaves
  • 1 lime
  • 1 tablespoon honey

Preparation

  1. Wash and dice strawberries, cucumber and grapes. Dice watermelon. Shred mint leaves.
  2. Combine fruit and cucumbers in a bowl. Zest the lime over the fruit. Cut the lime in half and juice into a small bowl. Add the honey and mix well.
  3. Stir fruit with lime mixture, or if using a processor pulse until coarsely chopped. Mix in mint leaves.
  4. Let salsa sit overnight in the refrigerator.

Helpful hints

  • Serve with low-sodium crackers or tortilla chips. Look for brands with the lowest amount of sodium.
  • You may also serve with homemade pita chips. Split the pitas in half and cut each half into quarters. Spray with cooking spray and bake at 350º F for about 8 minutes. You may also sprinkle with cinnamon and sugar after you spray with cooking spray.
  • Drain salsa through a fine sieve to remove fluid if you are on a fluid restriction.
