Ingredients
- 3 cups grated zucchini
- 1/2 cup finely chopped onion
- 1/4 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 3 tablespoons low fat mayonnaise
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground oregano
- nonstick cooking spray
Preparation
- Drain the grated zucchini in a colander or strainer to remove as much water as possible. Use a paper towel to press out some of the water through the strainer.
- Mix all ingredients together in a large bowl. Heat a waffle iron to medium heat.
- Spray waffle iron with cooking spray, drop about 1/3 cup of mixture in the center and close the iron. Cook for 4-5 minutes and remove to a plate to keep warm. Repeat with remaining mixture.
Helpful hints
- Two medium or 3 small zucchini will yield about 3 cups of grated zucchini.
- Serve these tasty zucchini waffles as a side dish with fish or your favorite chicken dish.
- Serve savory with sour cream or add some sweetness with maple syrup. You may also enjoy these waffles as a snack or unique breakfast.
