Zucchini Waffles

Ingredients

  • 3 cups grated zucchini
  • 1/2 cup finely chopped onion
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 3 tablespoons low fat mayonnaise
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground oregano
  • nonstick cooking spray

Preparation

  1. Drain the grated zucchini in a colander or strainer to remove as much water as possible. Use a paper towel to press out some of the water through the strainer.
  2. Mix all ingredients together in a large bowl. Heat a waffle iron to medium heat.
  3. Spray waffle iron with cooking spray, drop about 1/3 cup of mixture in the center and close the iron. Cook for 4-5 minutes and remove to a plate to keep warm. Repeat with remaining mixture.

Helpful hints

  • Two medium or 3 small zucchini will yield about 3 cups of grated zucchini.
  • Serve these tasty zucchini waffles as a side dish with fish or your favorite chicken dish.
  • Serve savory with sour cream or add some sweetness with maple syrup. You may also enjoy these waffles as a snack or unique breakfast.
